Tying in the peacock and the coffee plantations (the malabar region), ‘tokai’ has now become a symbol for Indian coffee estates and traceable Indian coffee.

Brewing Method

 

  • Add coffee and start timer
  • Pour 40ml of water and stir vigorously for a few seconds
  • At 30 seconds, pour another 200ml of water and cover with the lid
  • At 3:15 min, stir a few times and allow the grinds to fall
  • At 4:00 min, slowly plunge
  • Pour in to your cup immediately after plunging to avoid over extracting the coffee
