Single-variety Peranzana, northern Puglia's quiet olive.
Peranzana belongs to the flat, hot country around Torremaggiore, in Puglia's north, and local history says the Dukes of Burgundy carried it there centuries ago. It stayed, and became the olive that region is proudest of.
It makes an oil unlike most of Puglia: round and quietly sweet, green tomato and fresh almond, a soft herbal finish with barely a trace of pepper. Balance is the whole point of it — nothing shouts, nothing is missing.
This is the oil that runs a kitchen. It starts the soffritto, roasts the vegetables, dresses salads, greens, and fish, and goes places an intense oil can't: mayonnaise, baking, a child's plate.
The house puts its own pair simply — if Coratina is power, Peranzana is grace. Most Italian kitchens keep both open at once: one for the pan, one for the plate.
